very basic really: different light spectrum/wavelengths.

blue spectrum is good for vegetative growth
red spectrum is ideal for fruiting and flowing

you'll want some of both for most serious growing applications. That said, I run an inexpensive MH bulb over pepper plants, and they flower/fruit just fine. I'm not 'void' of red spectrum, but its pretty limited with MH bulbs unless you spend a lot for the fancier ones.

Some plants do great with just MH, some do great with just HPS. I can tell you 12 years ago we sold a majority MH over HPS and now it's 500 to 1 on sales HPS vs MH. With the introductory of switchable ballasts and plant spectrum lamps the market for HPS has blown up. I've always seen the best results with MH in growth and HPS in bloom.
